Homemade pancakes or homemade cinnamon Rolls for that special Saturday morning breakfast? Make this Cinnamon Roll Pancake recipe and you can have the best of both worlds! My kids and husband absolutely ADORE this recipe and these cinnamon roll pancakes are sooooo easy to make. I remember the first time I made these formy kids, they requested them for breakfast, lunch AND dinner. I made a triple batch, with the intention of putting leftovers in the fridge/freezer so on “lazy mornings” I could just pop them in the microwave! …..Nope. That triple batch didn’t make it past lunch!
Cinnamon Bun Pancakes
- 1 c Brown Sugar
- 5 tbs Butter, Softened
- 2 Tbs Cinnamon
- 8 oz Cream Cheese
- 1 1/2 c Powder Sugar
- 3 tbs Maple Syrup
- 3 tbs Milk
(You can also use a box)
- 1 1/2 c Flour
- 3 tbs Sugar
- 1.5 tbs Baking Powder
- 1 1/4 c Milk
- 1/2 tsp Vanilla
- 2 Eggs at Room Temperature
- 3 tbs Melted Butter Plus a Little More To Coat Griddle When Cooking
Directions for Making the Filling:
Use a mixer and combine the butter, brown sugar and cinnamon until well combined. Transfer the filling mixture into a ziplock bag and cut out a small 1/6″-1/4″ hole in the corner. set aside by placing it in a small bowl or cup keeping the cut end facing “up”.
Directions for Making the Glaze:
Use a mixer and combine the cream cheese, powder sugar, maple syrup, and milk. Set aside.
Directions for Making the Pancake Batter:
Whisk the flour, sugar, baking powder in a medium sized bowl. In a separate bowl whisk milk, vanilla, eggs and melted butter until smooth. Combine the wet and dry ingredients until smooth.
How to Bake Cinnamon Roll Pancakes:
Step One: Warm a griddle or skillet over medium heat with butter. Laddle 1/4 c of pancake batter in the hot skillet.
Step Two: The moment you see bubbles rising on the surface of the pancake, start from the center and create a swirl with the filling mixture. Repeat with each pancake, making sure they’re evenly spaced apart.
Step Three: Continue to cook the pancake until the bottom is golden brown about 2-3 minutes.
Step Four: Gently and quickly flip the pancake. Continue to cook for an addition 1- 2 minutes. Transfer cooked pancakes to a plate.
Step Five: Drizzle the glaze on top of warm pancakes, and enjoy!
