It’s so crazy that Judah is getting to the age where he actually is starting to have “preferences”. Especially when it comes to breakfast! His go-to breakfast requests are usually cereal, waffles or cinnamon crepes in the mornings. But sometimes he asks for “cake”. So, I bake madeleines. These simple french butter cakes are perfect for those “lazy mornings” and the kids (and adults) love them! And who wouldn’t? Don’t the shell madeleine molds make these the daintiest little cakes you’ve ever seen? My niece loves these so much, she calls them “Ariel cakes” 😂! So I’m sure you will love them too! Try one of these babies with your tea or coffee!
Yields 12 Madeleines
- 2 Eggs at room temperature
- 1 Tsp Vanila
- 1/3 c Sugar
- 1/4 c Salted Butter
- 1 Tbs Lemon Zest
- 1/2 c Flour and a bit more for sprinkling
- Powdered or Granulated Sugar
Step One: Preheat your oven to 375 degrees F and melt butter.
Step Two: Using a pastry brush and some of the melted butter, butter and flour your madeleine mold. Put the remaining melted butter to side.
Step Three: Beat eggs, vanilla while gradually adding sugar for about 5-10 minutes until the mixture is thick and ribbons form when the beaters are lifted.
Step Four: Sift in the flour, fold into the batter.
Step Five: Gently pour the remaining melted butter and lemon zest around the edge of the batter, fold into the batter.
Step Six: Spoon batter into each madeleine mold until the batter just mounds over the top of the molds.
Step Seven: Bake for 12-15 minutes until the edges of the cakes are golden brown and spring back when gently pushed on.
Step Eight: Use a knife along the edge of each madeleine to help you wiggle each cake from the madeleine mold.
Step Nine: While the madeleine cakes are still warm, sprinkle them with your choice of powder sugar or granulated sugar. Serve with tea of coffee! Enjoy!
